  • Potatoes: Use four raw sweet potatoes to make this easy air fryer sweet potato wedges recipe.

  • Can I use regular potatoes instead of sweet potatoes? If by regular you mean Russet potatoes, then yes! You can prepare the potatoes the same way. However, depending on the size of the potatoes, you may need to increase the recommended cooking time. Tools Used to Make This Recipe

Prepare the easy side dish by parboiling the sweet potatoes in a large pot, such as a large saucepan, Dutch oven, or stockpot for extra crispy wedges.

Toss the potatoes with the spice blend in a large mixing bowl and finish the sweet potato wedges in the air fryer. I use an Instant Pot Vortex Air Fryer with a large basket.

How to Make Air Fryer Sweet Potato Wedges

Step 1: Wash the potatoes under cold water. Then, peel them with a vegetable peeler. Transfer the potatoes to a cutting board and cut them into wedges with a sharp knife.

Step 2: Add the potatoes to a large pot and cover them with cold water. Bring the water to a boil over medium heat.

Step 3: Drain the potatoes and pat them dry with a paper towel to remove any excess moisture.

Transfer them to a mixing bowl and toss them with oil, salt, garlic powder, onion powder, smoked paprika, and black pepper.

Step 4: Preheat the air fryer to 375℉ (191℃). Prepare the air fryer basket with oil and arrange the wedges in a single layer.

Tip: You may need to work in batches depending on the size of your air fryer.

Step 5: Cook for 10-12 minutes, shaking the basket halfway. Remove the potatoes from the air fryer and garnish with cilantro to serve.

How to Cut Sweet Potato Wedges

  1. Wash and dry the sweet potatoes.
  2. Cut off the ends of a sweet potato to create a flat surface. Turn the potato on its end and slice it in half lengthwise.
  3. Lay the halves on the cutting board and slice them diagonally into wedges from end to end. Repeat with the remaining potatoes.

  • Cut the sweet potatoes the same size to ensure they cook at the same rate. You may need to cut larger sweet potatoes in half and then into thirds.
  • Parboil the potatoes to soften the insides so the outside can crisp up in the air fryer.
  • Arrange the wedges in the air fryer basket in a single layer, careful not to overlap. Adding too many at once causes the potatoes to steam rather than roast. You may need to work in batches depending on the size of your air fryer.
  • Give the basket a little shake halfway through to ensure even cooking and to prevent the potatoes from sticking.

Do I need to boil the potatoes?

It’s not necessary, but I recommend it. Parboiling the potatoes before air frying them is an easy way to ensure they become crispy. According to J. Kenji Lopez-Alt, boiling the potatoes softens the insides so they are cooked through before they crisp up in the air fryer.

Should I peel the potatoes?

Peeling the potatoes is up to you. I find the crispiness of the sweet potato skin to be the best part, but you can peel the potatoes with a vegetable peeler, depending on who you are serving.
