What are Deviled Eggs?
Classic deviled, or stuffed eggs, are a popular appetizer that involves cutting hard-boiled eggs in half and filling them with a creamy mixture crafted from egg yolks, mayonnaise, and warm spices. The name ‘deviled‘ refers to the “spicy or tangy” seasonings commonly used in the filling. The word deviled was used as an adjective in the 18th century to describe anything remotely spicy or fried.
Ingredients You’ll Need
- Eggs: Large, fresh eggs work best.
- Mustard: I love the combination of Dijon mustard for tanginess and the pop of color from regular mustard.
- Mayonnaise: I live in North Carolina, so Duke’s Mayonnaise is the only option (if you know, you know)!
- Pickle Brine: Pickles are serious business in our home, and so is the brine the pickles are in. Find the best pickles in the deli section of grocery stores, and if you want the good stuff, use brine from Grillo’s Pickles.
- Smoked Paprika: Paprika adds a smoky finish to deviled eggs without vinegar.
Additions and Substitutions
Toppings and mix-ins are how you take the classic deviled eggs without vinegar to the next level.
- Top the eggs with fresh chilies, crispy bacon, or brightly colored pickled red onions, yellow onions, or shallots to elevate the presentation.
- Bring the heat by including Sriracha or hot sauce in the egg mixture.
- Replace paprika with blackening seasoning or Slap Ya Mama Seasoning recipe for a bit of a twist.
- Use avocado as a topping or blend it with the egg mixture; this is a fun way to make “Green Eggs and Ham” with little ones. Or try my lemon dill aioli instead of mayonnaise and mustard.
- Garnish with fresh herbs like chives, scallions, or dill.
- Take the tanginess up a notch by adding chopped dill pickles into the filling along with pickle brine.

The full recipe with measurements is in the recipe card below.
Step 1: Make Instant Pot Hard Boiled Eggs
- Place eggs in a single layer on the trivet in an Instant Pot and add 1 cup of water.
- Secure the lid and set it to manual high pressure for 5 minutes. Allow the Instant Pot to release naturally for 5 minutes.
- Next, add the cooked eggs to an ice bath for another 5 minutes.
Step 2: Crack eggshells and carefully peel them under cool running water. Gently dry them with paper towels.
Step 3: Slice the eggs lengthwise. Remove the yolks and transfer them to a bowl. Place the egg whites on a serving platter.
Step 4: Mash the yolks into a fine crumble using a fork or blend it with a food processor with mayonnaise, mustard, pickle brine, paprika, and salt.
Step 5: Evenly disperse the yolk mixture into the egg whites.
Expert Tips
- Follow my instructions for hard-boiling eggs – careful not to overcook them. Overcooked eggs have a green ring around the yolk and won’t taste as good.
- Mash the egg yolks with a fork or a potato masher, or use a food processor or blender to create a smooth and creamy filling.
- Use a piping or zip-top bag to fill the egg whites with the mixture for a beautiful presentation; this also helps to distribute the filling evenly into the egg whites.

Frequently Asked Questions
What can I substitute for vinegar in deviled eggs?
I don’t use vinegar to flavor the filling for this deviled eggs recipe. Instead, I replaced the vinegar with pickle brine and mustard. Here are a few possible substitutes for vinegar in deviled eggs, depending on the flavor you prefer:
• Yogurt or Sour Cream: Consider using sour cream or yogurt instead of vinegar for a creamy filling. Either one would add a nice tangy flavor.
• Lemon juice: Lemon juice is a common substitute for vinegar in many recipes.
How do you make smooth deviled egg filling?
If you want a smooth filling, use an immersion blender, food processor, or blender to combine the mixture until it is smooth.
Can I hard-boil the eggs on the stovetop?
The secret to the best deviled eggs is perfectly cooked hard-boiled eggs. Begin by placing the eggs in a single layer in a saucepan or stock pot. Then, cover the eggs with water, with at least one inch of water above the eggs. Bring the pot to a rolling boil over medium-high heat and cook for 10-12 minutes. Rinse the eggs under cold water and add them to an ice bath to cool.
