WHAT YOU NEED TO MAKE THIS RECIPE

  • Chicken: This recipe is for chicken drumsticks, but use leg quarters, thighs, drumsticks, or a combination if that’s what you have on hand; be sure to adjust the cooking time accordingly.   • Peruvian Chicken Marinade: Flavor the drumsticks with ground cumin, smoky paprika, kosher salt, black pepper, fresh garlic, distilled white vinegar, and olive oil.

HOW TO MAKE OVEN BAKED DRUMSTICKS WITH PERUVIAN SPICES

Step 1: Adjust the oven rack to the upper-middle position and preheat the oven to 450°F (232°C). Line a rimmed baking sheet with a wire rack.

Dry the drumsticks thoroughly with a cloth, and set them aside.

Step 2: Add cumin, paprika, salt, pepper, garlic, vinegar, and oil to a small bowl and stir to combine. Distribute the mixture over the drumsticks using a pastry brush.

Step 3: Line the drumsticks onto the wire rack. Roast for 20-30 minutes until the chicken reaches an internal temperature of 165°F (73°C). Around the 20-minute mark, start checking the internal temperature of the drumsticks.

Step 4: Let the drumsticks rest for 10 minutes, then serve with serrano crema.
