Trim the brisket using a sharp knife to cut off any excess fat, leaving ½-inch of fat to render as it cooks.

Combine the ingredients for the rub in a bowl & coat the brisket. Wrap it with plastic & marinate for
6 hours
(at least 1 hour).

Preheat the oven to 275℉ (135℃). Line a baking sheet with a wire rack. Pour 1½ cups of water & 2 drops of liquid smoke into the baking sheet & set the brisket onto the wire rack.

Slow cook for 6-8 hours until the brisket reaches an internal temp of 195℉ (91℃). Replace the water in the bottom of the baking sheet as it cooks.
