Fig Jam  (No Pectin)

Ingredients:  Figs Lemon Juice Water White Sugar

Add figs to a saute pan with lemon juice & bring the mixture to a rolling boil over medium heat.

Stir in the sugar & water until the sugar dissolves. Lower the heat & simmer until the jam reduces for 30-40 minutes.

Remove from heat & skim the foam off of the top. Then, ladle the jam into  airtight jars.
