Warm butter in a saute pan over medium heat. Add onions & saute for 10 minutes. Then, stir in the garlic.

Add the mushrooms & cook for 5 minutes. Stir in xanthan gum & season with dried thyme, salt, & pepper.

Deglaze with sherry cooking wine & beef broth; reduce to low-medium heat, cover, & cook for 10 minutes until the soup thickens.
