Homemade Coleslaw with Mint and Cilantro

Slice the cabbage & carrots into thin strips using a sharp knife or mandolin. Then, chop the scallions, mint, & cilantro. Combine them in a mixing bowl & set them aside.

Add the ingredients for the dressing to a small bowl, & give it a quick stir.

Pour the dressing over the coleslaw mix & refrigerate for 2 hours before serving.
