Homemade Potato Soup in the Instant Pot

Melt butter in Instant Pot in saute mode. Add the onions, carrots, & garlic; cook until the onions become translucent & soften.

Deglaze the pot with chicken broth & bring the mixture to a boil on saute mode.

Stir in the white pepper, salt, parsley, chipotle powder, & potatoes. Secure the lid & set the Instant Pot to manual high pressure for 7 minutes. Then, allow the pot to release naturally for 10 minutes.

Remove the lid, & stir in the milk and heavy cream.

Then, use an immersion blender to break up the potatoes.
