Instant Pot Potato Soup

Melt butter in Instant Pot in saute mode. Add onion, carrot, & garlic, & cook for about 8 minutes.

Stir in the flour & build a roux.

Deglaze the pot with water & Better Than Bouillon. Bring the mixture to a boil on saute mode.

Stir in white pepper, salt, parsley, chipotle powder, & potatoes. Secure the lid & set the Instant Pot to manual high pressure for 7 minutes. Then, allow the pot to release naturally for 5 minutes.

Stir in the milk & heavy cream.

Use an immersion blender or potato masher to break up the potatoes.
