Jerk  Chicken  Fricassee


- Jamaican Jerk Seasoning - Chicken thighs - Avocado oil - Yellow onion - Green bell pepper - Scallions - Gochujang - Soy sauce - Lime juice

mix the spices

Combine the ingredients for jerk seasoning & coat the chicken with 2 tablespoons.

sear the chicken

Warm oil, then add half of the chicken, top side down, & cook until golden brown, 5-8 minutes. 

cook the vegetables

Add the onion, scallion whites, gochujang, & 2 tablespoons of jerk seasoning to the pan. 

soy sauce

lime juice





stir in

simmer the chicken

Return the chicken to the saute pan, cover, & reduce heat to medium-low. Simmer for 12 minutes.

thicken the gravy

Transfer to a serving platter & cook the liquid over medium-high heat until the gravy thickens, 7-10 minutes.

serve the fricassee

Pour the mixture over the chicken & garnish with scallion greens.
