Jerk  Chicken  Fricassee


Jerk Seasoning Chicken Thighs Avocado Oil Onion Green Bell Pepper Scallions Garlic Gochujang Soy sauce Lime juice

Combine the ingredients for jerk seasoning & coat the chicken with 2 tablespoons.

Warm oil, then add half of the chicken, top side down, & cook until golden brown, 5-8 minutes. 

Add onion, bell pepper, scallions, garlic, gochujang, & 2 tablespoons of jerk seasoning to the pan.

Return the chicken to the saute pan, cover, & reduce heat to medium-low. Simmer for 12 minutes.

Transfer to a serving platter & cook the liquid over medium-high heat until the gravy thickens, 7-10 minutes.

Pour the mixture over the chicken & garnish with scallion greens.
