Keto Biscuits and Gravy

Keto biscuits & gravy combine rich, tender almond flour biscuits with creamy sausage gravy for the perfect Southern dish with a twist.

Preheat the oven to 400°F (204°C) & line a  baking sheet with parchment paper. Then, crack eggs into a small bowl & whisk them together. Set them aside.

Add almond flour, baking powder, garlic powder, & salt to a mixing bowl.

Then, stir in the egg mixture, melted butter, & sour cream.

Using an ice cream scoop to scoop out the dough. Use your hands to form a rounded biscuit, then flatten the top with your fingers.

Brush the biscuits with melted butter.

Bake for 15 minutes until the biscuits are firm & golden.

While the biscuits are baking, brown the sausage in a saute pan over medium heat for 4-5 minutes.

Return the pan to medium heat & warm the butter. Stir in the half and half, water, black pepper, salt, garlic powder, & red pepper flakes. Then, gently whisk in the xanthan gum.

Bring the mixture to a  gentle simmer & add the reserved sausage. Cover & cook for another 5 minutes.
