Lotus Cake

JAMIL GHAR 

Preheat oven to 350° F (175° C). Then, grease two 9-inch pans. Cut parchment paper & grease them.

Whisk cake flour, baking powder, baking soda, & salt in a mixing bowl.

Combine butter,  oil, & white sugar in a mixing bowl & process with a hand mixer until smooth.

JAMIL GHAR 

On a low setting, add the egg yolks one at a time. Then, stir in the vanilla extract.

JAMIL GHAR 

Add one cup of dry mixture & ⅓ cup of buttermilk to the wet ingredients; repeat until they are fully combined.

Whisk egg whites and cream of tartar on high until peaks form. Then, fold the mixture into the cake batter.

JAMIL GHAR 

Divide the mixture into the two pans & bake for 25-30 minutes.

JAMIL GHAR 

Remove from the oven & set the cake pans on a wire rack until they cool.

JAMIL GHAR 

Beat butter with a hand mixer. Then, add Cookie Butter & continue mixing. Slowly add powdered sugar and the heavy cream, little by little.

JAMIL GHAR 

How to Assemble: 1. Cut a layer off of the top of the cakes. Cover with frosting & ½ the cookies. 2. Top with the second layer & coat with frosting.

How to Assemble: 3. Melt ¾ cup Cookie Butter in a microwave-safe dish. Pour evenly over the top of the cake and finish with cookie crumbles.
