Peruvian roasted chicken marinates in vinegar & traditional spices like smoked paprika & cumin. Our spatchcocked rendition of Pollo a la Brasa is packed full of flavor &  roasts in the oven in under an hour.

Butterfly the chicken.

Use a pastry brush to distribute the spices, garlic, vinegar, & oil onto the chicken.

Place the chicken in the middle of the wire rack & roast for 35 to 45 minutes.

Transfer the chicken to a cutting board & tent loosely with foil for 10 minutes.

Combine the ingredients in a blender to make serrano crema to serve with the chicken.
