PERUVIAN CHICKEN 

with Green Sauce

Golden-skin pollo a la brasa or Peruvian chicken marinates in vinegar & traditional spices before roasting in the oven.

Butterfly the  chicken.

Use a pastry brush to distribute the spices, garlic, vinegar, & oil onto the chicken.

Place the chicken in the middle of the wire rack & roast for 35 to 45 minutes.

Transfer the chicken to a cutting board & tent loosely with foil for 10 minutes.

Combine the ingredients for serrano crema in a blender to serve with the chicken.
