Lay the sirloin steak onto a flat surface, fat side up. Use a sharp knife & lightly score the fat cap.

Once the grill has reached 450° F
, set the skewers on the grill over high heat; cover & cook for
3 minutes.

3 minutes.

Turn off the furthest burner but maintain a
grill temperature of 300-350°F

20 minutes.

10 minutes
before carving; slice against the grain.
