Savory Quinoa Bites

Prepare the quinoa & transfer it to a mixing bowl.

Add the carrots & ¾ cup of water to the same pan & boil over medium heat. Reduce & cover the pan; cook for 8 to 10 minutes.

Add the garlic & beans to the pan; saute for another minute or until the water evaporates. Drain & add it to the mixing bowl.

Meanwhile, line a rimmed baking sheet with parchment paper. Use a potato masher or fork to mash the carrots & beans.

Then, transfer them to the bowl with quinoa. Add black pepper, garlic powder, paprika, cumin, & parsley; stir to combine.

Preheat the oven to 400℉ (204℃). With lightly oiled hands, roll the mixture into 1-inch balls & line them onto the rimmed baking sheet.

Spray the balls with avocado oil & bake for 20 minutes, flipping them halfway through.
