Sushi Bake with Salmon

Cook the rice with vinegar & salt in a saucepan according to the package

Set the oven to a low broil & line a  baking sheet with parchment paper. Arrange the salmon fillets onto it & broil uncovered for 15 minutes.

Press the reserved rice into the bottom of a prepared baking dish.

Use a fork to shred the salmon & add it to a mixing bowl. Add 3 tbsp of mayonnaise & 3 tbsp of Sriracha to the bowl, & stir to combine.

Then, top the rice with the salmon mixture.

Drizzle with Kewpie Mayo & Sriracha & top with furikake; set oven to 450° F & bake for 10 minutes, followed by high broil for 2-3 minutes.
