Yellow Thai Curry with Chicken

Thai chicken curry cooks with tender chicken thighs & a variety of fresh vegetables; best of all, the meal is ready in under 30 minutes!

In a heavy-bottomed pan, heat the curry paste & then add the vegetables, coconut milk, & Thai basil.

Reduce heat & return the curry to a light simmer, add the chicken & cook for 8-10 minutes.

Add garlic & ginger, then allow the mixture to simmer for another 2-3 minutes.

Garnish with Thai basil & serve with jasmine rice.
