Warm oil in a saute pan over medium heat. Add the onions and cook until they become translucent and soften, for about 10 minutes.
Next, add ground beef and break it up with a meat chopper. Cook until brown and heated through for about 10 minutes.
Stir in the tomato, garlic, and cilantro, and season with 2-3 tablespoons of taco seasoning. Mix to combine. Cover and simmer for about 5 minutes.
Spoon beef into the prepared corn tortillas and garnish with your favorite toppings.
