  • 2 pounds chicken wings
  • 1 tablespoon baking powder
  • 1 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper, coarse ground
  • ½ teaspoon smoked paprika
  • 5 tablespoons butter, unsalted, melted
  • 2 tablespoon parsley, chopped
  • 6 cloves garlic, minced
  • 4 tablespoons parmesan, grated
Instructions
 
  • Dry the chicken wings using a cloth to remove excess moisture. Then, preheat the air fryer to 400°F (204°C).
  • Combine baking powder, salt, garlic powder, pepper, and paprika in a small bowl; pour the mixture over the chicken wings and toss.
  • Line the chicken wings into the air fryer basket in a single layer and air fry for 18 minutes, flipping the wings halfway through. Work in batches until all the chicken is cooked.
  • Allow the wings to cool for 10 minutes, then toss them in a mixing bowl with butter, parsley, garlic, and parmesan to serve.
Notes
Expert Tips:
  • The air fryer lets the air move freely around the chicken wings so the heat can circulate on all sides. If you don’t have a wire rack, I recommend lining a rimmed baking sheet with parchment paper. 
  • Pat dry the wings to achieve a nice, crispy coating.
  • Ensure you space the chicken wings in the air fryer basket; crowding results in steaming instead of baking.
  • Baking powder is alkaline, and pairing it with salt changes the acidity or pH of the skin, which helps the wings become crispy. 
  • Let the chicken wings rest after roasting them, allowing the wings to release moisture from the skin so they stay crispy.
