  • 1 medium spaghetti squash, 3 pounds, halved and cleaned
  • olive oil, to taste
  • kosher salt, to taste
  • black pepper, coarse ground, to taste

How to Cook Spaghetti Squash in the Oven:

  • Preheat the oven to 400°F (176°C). Then, place the halved spaghetti squash on a rimmed baking sheet. Drizzle both sides with olive oil and season with salt and pepper.
  • Turn them over so that the insides face down on the baking sheet and roast for 40 minutes until you can easily pierce the flesh with a fork.
  • Remove the squash from the oven and allow it to cool. Then, use a fork fluff to separate the strands and add them to a mixing bowl.

How to Cook Spaghetti Squash in the Microwave:

  • Drizzle the squash with olive oil and season with salt and pepper.
  • Add water to a microwave-safe dish, about 1-inch high. Place the halved spaghetti squash flesh down in the dish. Depending on the size of your microwave you may need to cook one half at a time.
  • Microwave for 10 minutes and check for doneness. Continue microwaving in 2 minute increments until the spaghetti squash is fork tender.
  • Carefully remove the squash from the microwave and allow it to cool. Then, use a fork fluff to separate the strands and add them to a mixing bowl.
