Ingredients
  
  • 1 pound red potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice, fresh
  • 4 cloves garlic, minced
  • 2 teaspoons kosher salt
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon black pepper, coarse ground
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried thyme
Instructions
 
  • Preheat the air fryer to 400℉ (204℃). Then, cut the potatoes in half and into thirds to create wedges.
  • Pat the potatoes dry to remove any moisture. Then, add them to a mixing bowl and toss with olive oil, lemon juice, minced garlic, kosher salt, oregano, basil, black pepper, parsley, garlic powder, onion powder, rosemary, and thyme.
  • Bake the potatoes for 15 minutes, shaking the basket every 5 minutes. Garnish with fresh oregano leaves to serve, and enjoy!
Notes
Expert Tips:
  • Cut the potatoes the same size to ensure they cook at the same rate.
  • Pat dry the potatoes to remove excess moisture.
  • Be careful not to overcrowd the pan. Arranging the potatoes too closely together can cause them to steam rather than roast, preventing them from becoming crispy.
  • Shake the basket halfway through to keep the potatoes from sticking.
