Homemade Tacos with Ground Beef

Ingredients
  
  • corn tortillas
  • 1 tablespoon avocado oil
  • 1 yellow onion, finely diced
  • pounds ground beef, 80/20
  • 1 Roma tomato, finely diced
  • 2 garlic cloves, minced
  • ½ cup fresh cilantro, chopped
  • 2-3 tablespoons taco seasoning
Instructions
 
  • Warm corn tortillas on the stovetop or in the oven and set them aside in a cloth or tortilla keeper so they retain their heat.
  • Warm the oil in a saute pan over medium heat. Add the onions and cook until they soften, for about 10 minutes.
  • Add the ground beef to the pan with the onions and break it up using a meat chopper. Cook until brown and heated through for 10 minutes.
  • Stir in the diced tomato, garlic, and chopped cilantro. Season with the taco seasoning, and mix to combine. Cover and simmer for about 5-10 minutes.
  • Spoon the ground beef into corn tortillas and garnish with your favorite toppings.

Serving Size: 2 Tacos
Expert Tips: 
  • If using ground beef with a higher fat content, you can drain the excess grease after the meat cooks or continue to cook the ground beef until the beef absorbs the liquid.
