What are Hasselback Potatoes?

Hasselback potatoes are another way to prepare a baked potato. They are thinly sliced and left joined at the bottom so that they fan out as they cook and develop a crispy golden exterior.

Ingredients You’ll Need

  • Potatoes: Yukon gold or medium-size russet potatoes fan out perfectly as they cook.
  • Spices: Season the accordion potatoes with salt and black pepper before cooking in the air fryer.
  • Garlic Butter: Coat the potatoes in a flavorful sauce made from melted butter, sautéed minced garlic, and fresh parsley.

Additions and Substitutions

How to Make Air Fryer Hasselback Potatoes

The full recipe with measurements is in the recipe card below.

How to Cut Hasselback Potatoes

  1. Wash and rinse the potatoes to remove dirt.
  2. Use a Hasselback potato guide or two chopsticks to cut the potatoes. Place them on either side to prevent slicing through the other side.
  3. Ensure the slices are 3-5mm apart. Then, pat the potatoes dry using a paper towel to remove excess moisture.

For the perfect cook and crispy golden edges, I highly recommend checking out Chef John’s video for preparing the potatoes, beginning at 1:09. He peels the skins beforehand, but doing so is up to you.

For the Hasselback Potatoes:

Expert Tips

  • Select medium potatoes that are uniform in size to ensure they cook evenly and at the same rate. Larger potatoes require a longer cooking time.
  • Making Hasselback potatoes involves making thin slices along the length of the potato without cutting through. Use a sharp knife and a Hasselback potato guide for evenly spaced cuts. You can also place chopsticks on either side of the potato if you don’t have a guide.

Serving Suggestions

Serve air fryer hasselback potatoes as a side dish with all your favorite toppings such as bacon bits, shredded cheddar cheese, and crumbled bleu cheese! Plus, the potatoes are a great addition to basic weeknight meals like ribeye steak, grilled chicken drumsticks, or Cajun honey butter salmon.

What to do with the Leftovers

  • Refrigerate  Store the leftover potatoes in an airtight container for 3-4 days.
  • Freeze – Let the potatoes cool and transfer them to a freezer-safe container or bag. Air fryer hasselback potatoes will freeze for 2-3 months.
  • Thaw  Defrost the potatoes in the refrigerator overnight.
  • Reheat  Preheat the air fryer to 350℉ (176℃) and cook for 5 minutes or warm them in a microwave, but they won’t be as crispy.

Frequently Asked Questions

Where did Hasselback potatoes originate?

Hasselback potatoes came from the Hasselbacken Hotel in Stockholm, Sweden, and they have gained popularity as a delicious way to prepare potatoes.

Do you peel the potatoes?

Peeling the potatoes is up to you. I find the crispiness of the potato skin to be the best part, but you can peel the potatoes with a vegetable peeler before you cook them if you prefer.

How long to cook hasselback potatoes in air fryer?

The cooking time for air fryer hasselback potatoes depends on the size of potatoes you use and your specific air fryer model. Small to medium potatoes cook for 15-20 minutes, whereas larger potatoes require 25-30 minutes.
