Keto Green Bean Casserole

When it comes to holiday dinner spread, it’s all about the sides. This easy homemade keto green bean casserole is a simple dish with fresh ingredients anyone can enjoy!

What is Green Bean Casserole?

The American side dish served at Christmas, Thanksgiving, and Easter holidays was developed by Campbell’s test kitchen in the sixties. To this day, families celebrate with canned green beans, canned cream of mushroom soup, and packaged French fried onions (so addicting).

Ingredients You’ll Need

  • Cream of Mushroom Soup: Use store-bought cream of mushroom or prepare homemade keto cream of mushroom soup. I use unsalted butter, white onion, fresh garlic cloves, mushrooms, xanthan gum,  dried thymekosher salt, coarse black pepper, beef broth, sherry vinegar, and heavy cream to make my own soup from scratch.
  • Oil and Butter: Saute the onions in extra-virgin olive oil and unsalted butter.
  • Onion: Since keto green bean casserole isn’t a dish I am making everyday, I don’t mind cooking with onions while following a ketogenic way of eating. You can top the green bean casserole with crushed pork rinds or parmesan crisps for a lower-carb option.
  • Green Beans: Fresh green beans produce the best results.
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon unsalted butter
  • 2 medium yellow onions, thinly sliced
  • 1 pound green beans, ends removed, and cut in half

Additions and Substitutions

  • Experiment with mix-ins. Include crispy bacon bits or cream cheese for even more flavor.
  • Top it off. Garnish the keto green bean casserole with crushed almonds or shredded cheddar cheese.

Prepare the Cream of Mushroom Soup

Step 1: Warm unsalted butter in a saute pan over medium heat. Add the onions and saute until they become translucent and soften. Stir in the garlic and cook for one minute.

Step 2: Add the mushroom slices and saute for 5 minutes. Then, stir in the xanthan gum, dried thyme, kosher salt, and black pepper.

Step 3: Deglaze the pan with sherry vinegar and beef broth. Bring the mixture to a bowl over medium heat.

Reduce the heat, cover, and gently simmer for 10 minutes until the soup thickens.

Step 4: Remove the pan from heat and stir in the heavy cream.

Assemble the Green Bean Casserole

Step 1: Meanwhile, warm a large skillet over medium-low heat for two minutes. Add the olive oil and butter and cook until the butter melts.

Then, add the onions. Saute the onions for 20-25 minutes until they brown and become crispy.

Step 2: Use a slotted spoon to transfer the crispy onions to a plate lined with paper towels and set them aside.

Step 3: Preheat the oven to 350°F (176°C). Prepare a baking dish with unsalted butter or cooking spray and arrange the green beans into the bottom of the pan.

Step 4: Top the green beans with the keto cream of mushroom soup. Cover the baking dish with foil and bake for 15 minutes.

Remove the foil, add the reserved onions, and bake uncovered for 15 minutes.

Serving Suggestions

Holiday meals can get hectic, but this casserole is a breeze to make ahead. Store the casserole and the crispy fried onions separately for the best results.

You can keep the onions in an airtight container or paper bag on the counter and refrigerate the green bean and mushrooms soup mixture up to 2 days ahead.

When it’s time to serve, let the casserole sit at room temperature for 30 minutes before baking. Then, pop it in the oven and bake as directed for a stress-free side dish.
