  • Cilantro: Cilantro brightens the salad.
  • Olive Oil + Lime: Flavor the dressing with olive oil and lime.
  • Garlic: I suggest using one clove, but don’t let my recipe tell you how much garlic to use – go for it.
  • Avocado: Use avocado to add creaminess to the salad.
  • Spices: Finished the salad with kosher salt and black pepper.

How to Make Avocado Cucumber Tomato Salad

Step 1: Cut the cucumbers, tomatoes, and cilantro. Transfer them to a serving bowl.

Step 2: Add olive oil, lime juice, fresh garlic, salt, and pepper and stir to combine.

I made this salad for dinner last night and it was a hit! The fresh herbs and juicy tomato paired perfectly with the creamy avocado and crisp cucumber.
