Classic deviled eggs, also called stuffed eggs, are a popular appetizer that involves cutting hard-boiled eggs in half and filling them with a creamy mixture crafted from egg yolks, mayonnaise, and warm spices. 

The name ‘deviled‘ refers to the “spicy or tangy” seasonings commonly used in the filling. The word deviled was used as an adjective in the 18th century to describe anything remotely seasoned or fried.

Ingredients You’ll Need

  • Eggs: Large, fresh eggs work best.
  • Mustard: I love the combination of Dijon mustard for tanginess and regular mustard for color.
  • Mayonnaise: I live in North Carolina, so Duke’s mayonnaise is the only option (if you know, you know)!
  • Pickle Brine: Find the best pickles in the deli section of grocery stores, and if you want the good stuff, use the brine from Grillo’s Pickles.
  • Smoked Paprika: Paprika adds a smoky finish to the deviled eggs without vinegar.

Additions and Substitutions

  • Top the deviled eggs without vinegar with fresh herbs like dill, scallions, or chives, and pickled chiles, crispy bacon, or pickled red or yellow onions are a tasty addition. 
  • Include Sriracha or your favorite hot sauce in the egg mixture.
  • Replace smoked paprika with blackening seasoning or my Slap Ya Mama Seasoning recipe for a flavorful twist.
  • Use fresh avocado as a topping or blend it with the egg mixture. It’s a fun way to make “Green Eggs and Ham” with little ones. Or you can try lemon dill aioli or ancho aioli instead of mayonnaise and mustard.

How to Make Deviled Eggs without Vinegar

Step 1: Make Instant Pot Hard Boiled Eggs

  1. Place the eggs in a single layer on the trivet in an Instant Pot and add 1 cup of water.
  2. Secure the lid and set it to manual high pressure for 5 minutes. Allow the Instant Pot to release naturally for 5 minutes.
  3. Next, add the cooked eggs to an ice bath for another 5 minutes.

Step 2: Crack eggshells and carefully peel them under cool running water. Gently dry them with paper towels.

Step 3: Slice the eggs lengthwise. Remove the yolks and transfer them to a bowl. Place the egg whites on a serving platter.

Step 4: Mash the yolks into a fine crumble using a fork or blend it with a food processor with mayonnaise, mustard, pickle brine, paprika, and salt.

Step 5: Evenly disperse the egg yolk mixture into the egg whites.

I don’t use vinegar to flavor the filling. Instead, I replaced the vinegar with pickle brine and mustard. Here are a few more substitutes for vinegar in deviled eggs:

Consider using sour cream or Greek yogurt instead of vinegar in the creamy filling. Either would add a nice tangy flavor, and fresh lemon juice is another common substitute for vinegar. 

How do you make smooth deviled egg filling?

If you prefer a smooth filling, use an immersion blender, food processor, or blender to combine the mixture until it is smooth.

Can I hard-boil the eggs on the stovetop?

The secret to making the best-deviled eggs recipe starts with perfectly cooked hard-boiled eggs. Begin by placing the eggs in a single layer in a saucepan or stock pot. Then, cover the eggs with water, with at least one inch of water above the eggs.

Bring the pot to a rolling boil over medium-high heat and cook for 10-12 minutes. Rinse the eggs under cold water and add them to an ice bath to cool.
